Serves 4 


  • 400gms Udon noodles
  • 600gm lean beef (sliced)
  • Bunch of broccoli
  • 1 carrot (julienne)
  • 1/2 red onion
  • 1/2 red capsicum
  • 200gm snow peas
  • Handful of mushrooms (diced)


Stir Fry

  1. Boil 400g Udon noodles for 30 secs, stir and drain
  2. Add broccoli and snow peas to boiling water for approx. 2 min
  3. In non stick pan spray with olive oil add carrot, red onion, red capsicum, diced mushrooms and sliced beef
  4. When beef is brown add the cooked broccoli and beans to the pan and stir through
  5. Add cooked noodles


  1. Mix 2 tablespoons sweet chilli sauce, 2 tablespoons soy sauce and 1/2 squeezed lime juice
  2. Stir sauce through and toss through the stir fry
