Beef Stir-Fry With Udon Noodles

Ingredients
- 400gms Udon noodles
- 600gm lean beef, sliced
- Bunch of broccoli
- 1 julienne carrot
- 1/2 red onion
- 1/2 red capsicum
- 200gm snow peas
- Handful of mushrooms, diced
Method
Stir Fry:
- Boil 400g Udon noodles for 30 secs, stir and drain
- Add broccoli and snow peas to boiling water for approx. 2 min
- In non stick pan spray with olive oil add carrot, red onion, red capsicum, diced mushrooms and sliced beef
- When beef is brown add the cooked broccoli and beans to the pan and stir through
- Add cooked noodles
Sauce:
- Mix 2 tablespoons sweet chilli sauce, 2 tablespoons soy sauce and 1/2 squeezed lime juice
- Stir sauce through and toss through the stir fry
