Ingredients
- 500g chicken breasts (approx 4 chicken breasts)
- 3 tbsp. pesto
- 85g mozzarella cheese
- 3 tomatoes, sliced
Method
- Butterfly, bash or slice the chicken breasts so they are quite thin and in 4 serves.
- Cook on a non stick frypan or in the oven on a lined baking tray.
- Once cooked, transfer to a baking tray if you cooked them in a pan and top with the pesto, sliced tomato then cheese.
- Oven bake or grill for approximately 10 minutes, or until cheese is golden.
- Serve with a side salad or vegetables.
