A light, moist and super fluffy choc orange muffin makes an ideal morning tea snack. Protein-packed, low in sugar, and guilt-free at only 156 calories each.

Ingredients

  • 200g Vetta Smart Protein plain flour or oat flour
  • 30g The Lady Shake Vanilla
  • 1/4 cup Natvia sweetener
  • 1/2 tsp baking powder
  • 2 eggs
  • 70g Nutelex or light butter, melted
  • 1/3 cup almond milk
  • 1/2 cup orange juice
  • Zest of 1 orange
  • 100g plain Greek yoghurt
  • 1/3 - 1/2 cup reduced sugar chocolate chips

Method

  1. Preheat oven to 180°C
  2. In a mixing bowl, combine flour, The Lady Shake, Natvia sweetener, and baking powder
  3. Stir in the eggs, milk, orange juice, zest, melted butter and yoghurt and mix well
  4. Fold in the chocolate chips
  5. Pour batter into a 6 whole muffin tin either greased or a silicone muffin pan
  6. Bake in the oven for 20-25 minutes
