Ingredients
- 1 large brown onion
- 500g lean beef mince
- 1 teaspoon minced garlic
- 1 teaspoon chilli powder (or chilli flakes)
- 400g tinned tomatoes (salt reduced)
- 2 Cups reduced salt vegetable stock
- 400g red kidney beans
- 1 tablespoon cumin
- 1 tablespoon salt reduced tomato paste
- 1 cup cooked rice
- 1 avocado
- Side salad to serve
Method
- heat frypan and spray with oil
- when hot add diced onions, garlic, cumin, chilli and mince and cook till brown
- When meat brown add tomatoes, tomato paste, vegetable stock and kidney beans (rinsed) and mix
- cook for another 5 minutes then serve with cooked rice (1 man handful each)
- smash avocado with fork and serve on top
