1/2 cup egg whites
120g haloumi cheese
1 zucchini, grated
6 cherry tomatoes, sliced
1 red capsicum, diced
1/4 cup almond milk or milk of choice
1/2 brown onion, finely diced
salt and pepper
Preheat oven to 180 degrees celsius. Grease a baking tray.
Heat a non stick frypan over medium to high heat, fry haloumi until golden brown. Set aside.
Combine all ingredients in a bowl. Cut the haloumi into smaller pieces and stir into the egg mix. Pour the egg mix into a baking tray.
Cook for 35 minutes or until cooked through.
