Ingredients:

8 mini tortilla stand N stuff boats

4 eggs + 2 eggwhites + dash almond milk

100g ham, chopped

50g low fat cheese
 or mozzarella

capsicum

onion

spinach

Method:

Whisk eggs, add on chopped ham / onion / capsicum/ spinach / salt + pepper / garlic etc and pour evenly into each taco boat. Oven bake at 180 deg until egg cooked (approx 20mins)
