Ingredients:

500g chicken breasts (approx 4 x chicken breast)
3 tbsp. pesto
85g mozzarella cheese
sliced tomato 

Method:

Butterfly, bash or slice the chicken breasts so they are quite thin and in 4 serves.
Cook on a non stick frypan or in the oven on a lined baking tray.
Once cooked, transfer to a baking tray if you cooked them in a pan and top with the pesto, sliced tomato then cheese. Oven bake or grill for approximately 10 minutes, or until cheese is golden. Serve with a side salad or vegetables.
