Time:180 min    

Serves: 2

 

Ingredients:

  • 1 Frozen Turkey – 4 servings (to use the remainder for lunch next day)
  • 1 large sweet potato chopped into large even pieces to go in oven
  • broccoli – approx 5 florets
  • 1 carrot
  • 4 cubes frozen spinach 1C peas (or handful snow peas)

 

Method:

  1. Leave turkey in fridge over night to defrost
  2. Preheat oven 180C
  3. Take turkey out of packaging and wrap in foil and place in oven for approx 1 hour 20 min
  4. Once turkey has been in oven for an hour place sweet potatoes in oven on a pan with olive oil spray and lightly spray top of sweet potato
  5. Take turkey out of oven after 1hr 20mins and remove foil off and cook for another 30 min
  6. With 10 min to go put veggies in microwave for approx 8min on high
  7. Carve up and serve with baked potatoes and veggies
