Ingredients

  • 1 tablespoon of coconut oil
  • 600 grams of lean beef mince
  • 1 brown onion
  • 1 large carrot
  • 2 cups of Basmati rice
  • 1 large tomato
  • 1 cup of baby spinach
  • 2 garlic cloves
  • 1 teaspoon of fresh parsley
  • ½ teaspoon of salt
  • ½ teaspoon of pepper
  • ½ teaspoon of chilli flakes (optional)
  • 1 tablespoon of paprika

Method

  1. In preparation, cook your basmati rice and set it on the side.
  2. Prepare your vegetables by chopping your spinach, slicing your mushrooms, chopping your tomato, peeling and dicing your carrot and finely dicing your onion and garlic.
  3. Slice the tops off your capsicum (put your tops to the side for later) and with a spoon scoop out all of the seeds, then place your capsicums on a baking dish
  4. Pre heat the oven to 200 degrees.
  5. Add oil to a pan, and put in your onion and garlic, once brown, add your salt, pepper, paprika and chilli flakes.
  6. Add the mince, and once brown and broken up, add the carrot and stir through.
  7. Once the mince and carrot is cooked through, add your rice and stir through.
  8. Add your mushrooms, spinach, tomato and parsley.
  9. Once cooked through, spoon the mixture into your capsicums.
  10. Before you pop the capsicums in the oven, pour ¼ cup of water into each capsicum to ensure they don’t dry out whilst baking.
  11. Add the tops to the capsicums, and bake for 30-40 minutes until cooked through.
  12. Serve and enjoy!
