INGREDIENTS

  • 2 small chicken breasts (approx 300g)
FOR SAUCE:
  • 1 tablespoon sweet chilli sauce
  • 1 teaspoon garlic
  • 2 tablespoons soy sauce
  • Juice of 1 lime 
FOR WRAPS:
  • 1 carrot (grated)
  • 4 large lettuce leaves (2 per person)
  • 2 tomatoes (diced)
  • 1/2 cucumber (diced)
  • 1/2 red onion (sliced)

METHOD

  1. Make sauce – in a small bowl mix sweet chilli, soy, garlic and lime.
  2. Cut chicken into slices and add to sauce mix.  Let soak for 15 min (if time permits)
  3. Heat fry pan and spray with oil
  4. Cook chicken and sauce mix in fry pan for approx 3 min each side or until cooked through
  5. While cooking prepare lettuce wraps
  6. Spread the carrot, tomatoes, onion and cucumber between the 4 lettuce leaves
  7. Add chicken and roll them up.
