The lady omelette

The Lady Omelette is a terrific high protein breakfast, lunch or dinner. It’s quick and easy and tastes delicious!

Serves 2


  • 1 chicken breast (250g)
  • 2 eggs
  • egg whites 
  • 1/2 red onion
  • 1 cup mushrooms (diced)
  • 1 cup capsicum (diced)
  • 1 tablespoon light cottage cheese
  • 1/2  a tomato (diced)
  • 1 teaspoon sweet chilli sauce
  • cracked pepper (to serve)
  • 1 slice wholemeal bread (optional)


  1. Grill 1 chicken breast (250g) in pan, lightly spray with olive oil
  2. Remove chicken breast from pan and add egg whites and eggs
  3. Add red onion, diced mushrooms, diced capsicum, diced tomato, light cottage cheese, and sweet chilli sauce
  4. Mix until cooked
  5. Add cooked diced chicken breast and mix
  6. Add cracked pepper and serve
  7. (Optional) eat with 1 slice wholemeal bread
