Ingredients

Salad:

  • 15 x grape tomatoes
  • 100g purple cabbage
  • 100g baby spinach
  • 2 tablespoons diced Spanish onion
  • 1 x large yellow capsicum
  • ½ cup cooked and shelled edamame beans
  • 30g baby bocconcini

Dressing:

  • ¼ cup extra light olive oil
  • ¼ cup white vinegar
  • 2 teaspoons dijon mustard
  • Salt and pepper

Method

  1. Diced all salad ingredients and layer into a bowl
  2. Combine dressing ingredients in small container with lid and shake well to combine
  3. Dress salad and serve!
