Ingredients
- A handful of baby spinach leaves, chopped (or 2 cubes of frozen spinach)
- 2 eggs
- 2 egg whites
- 1 whole grain tortilla or wrap
- 1 sliced light cheese
- ¼ avocado, sliced
- 2 tbsp of salsa
Method
- Heat up a non-stick frying pan and spray with cooking oil.
- Chuck in the spinach and cook, stirring, until wilted – about 2 minutes.
- Whisk together the eggs and egg white in a small bowl. Add the egg mix to the pan and stir until cooked through (this will take about 3–4 minutes).
- Place the egg mixture in the centre of your burrito and sprinkle with cheese.
- Top with avocado, salsa and fold burrito-style.
