Ingredients
- 500g mince (turkey is a good option)
- 1 tin cherry tomatoes
- 2/3 eggs per person
- Parsley
- 600ml beef stock
- 1/4 teaspoon Garam masala
- 1 teaspoon Cumin
- 1 Tablespoon Sweet Paprika
- 2 Tablespoon Garlic
- 1/2 teaspoon Ginger
- 2-3 Tablespoon dark soy sauce
- 1 Lemon
Method
- Cook the mince until well done.
- Add spices and soy sauce. Stir.
- Add tinned tomatoes and beef stock.
- Simmer for 10 minutes covered.
- Crack in eggs. Cook for 3-5 minutes until the whites are just cooked and the yoke is to your liking.
- Garnish with parsley and squeeze over lemon juice.
