Ingredients
For the Cake:
- 2 scoops The Lady Shake Chocolate
- 1 scoop Chocolate Super Greens
- 1/4 cup unsweetened almond milk
- 1 large egg
- 2 tbsp melted coconut oil
- 1/4 cup chopped dark chocolate (at least 70% cacao)
- 1/4 tsp baking powder
- Pinch of sea salt
For the Fondant Centre:
- 2 tbsp chopped dark chocolate (at least 70% cacao)
- 1/2 tsp unsalted butter
Method
- Preheat oven to 200°C. Grease two ramekins.
- In a bowl, whisk together Lady Shake powder, Super Greens powder, almond milk, egg, melted coconut oil, baking powder, and salt until smooth.
- Fold in the chopped dark chocolate for the cake batter.
- Make the fondant centre: in a separate heatproof bowl, melt the chopped dark chocolate and butter together over a double boiler or in short microwave bursts, stirring until smooth. Let it cool slightly, until it thickens to a spreadable consistency.
- Divide the cake batter evenly between the ramekins. Make a small well in the centre of each using the back of a spoon. Spoon a dollop of the fondant mixture into each well, making sure it's completely covered by batter.
- Bake for 10 to 12 minutes, or until a toothpick inserted around the edge comes out with crumbs attached and the centre is still fudgy. Let them cool for a few minutes before serving.
Tips
For a little extra indulgence, dust with icing sugar or add a dollop of light cream. You can also swap the chopped chocolate for other mix-ins like chopped nuts or fresh berries.
