Healthy Anzac Biscuits

A feel-good twist on a classic. Because sometimes you just want a biscuit with your cup of tea, not a full baking project or something loaded with ingredients you don’t recognise.
These are simple, nourishing, and easy to make with what you probably already have in the pantry. No overthinking, no complicated swaps, just a better option that still tastes like a proper treat. Perfect for those moments when you want something a little sweet but still feel like you’re looking after yourself at the same time.
Makes 20 small biscuits (Serves 10)
Ingredients
- 1.5 cups rolled oats
- 1/2 cup chopped almonds
- 1/2 cup coconut
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon baking powder
- 1 tablespoon coconut oil
- 1/4 cup water
Optional: 2 scoops The Lady Shake (Unflavoured, Vanilla, or your favourite flavour)
Method
- Preheat your oven to 160 degrees.
- Add the oats, coconut, and almonds to a food processor or blender and pulse until combined.
- Add the remaining ingredients, including your Lady Shake, and blend again until the mixture comes together.
- Roll into 20 small balls, then gently flatten into biscuit shapes.
- Place on a lined baking tray and bake for around 20 minutes, or until lightly golden.
- Let them cool slightly, then enjoy.
