
Chinese Chicken Salad

Ingredients
- 1/2 Wombok cabbage
- 2 large carrots
- 1 red capsicum
- 2 shallots
- 50g sesame seeds
- 500g poached chicken breast
- 50mL white vinegar
- 50mL soy sauce
- 20mL sesame oil
Method
- Shred cabbage.
- Slice the carrots and capsicum into fine strips.
- Cut the spring onions finely.
- Poach chicken breast in 2cm of water in a covered pot.
- Slice cooled chicken breast into pieces.
- Toss the chicken with all the salad ingredients.
- Combine all the dressing ingredients and stir.
- Add the dressing to the salad and mix through.
